Domaine Hubert Lignier (Morey-St-Denis)
This domaine was originally established in 1880 by Jacques Lignier and since the untimely death of Romain Lignier in October 2003, Hubert's retirement plans changed. Romain’s brother Laurent joined his father at the domaine ensuring survival of this first rate producer. The nine hectares of vineyards are largely located in Morey-Saint-Denis, Gevrey-Chambertin and Chambolle-Musigny. The Ligniers follow the principles of lutte raisonnée, using only organic compost and abstaining from herbicides, winemaking here holds traditional practices at its core. The Lignier wines are profound, rich and classy red Burgundies with great complexity and structure. They are natural, exquisitely pure wines which undergo extended maceration to aid extraction. The wines spend up to twenty-four months ageing in barrel, although new oak barrels are limited to twenty to thirty percent and only indigenous yeasts are used.
