    Vin Jaune is a unique dry white wine from the Jura region, aged under a layer of yeast known as "flor," similar to the process of making Sherry. The main grape used for vin jaune is Savagnin, a local variety that gives the wine its distinct flavor. The region also grows other interesting grape varieties like Poulsard, which produces lighter, fruit-forward red wines, and Trousseau, known for its fuller, more structured reds. Chardonnay is another key variety in Jura, often used for sparkling wines and still whites.

    Vin de Paille is a sweet wine made from grapes that are dried, such as Chardonnay, Poulsard, and Savagnin, concentrating their sugars for a richer flavor. Crémant du Jura is a sparkling wine made from slightly under-ripe Chardonnay grapes, created in the traditional method, similar to Champagne. Macvin du Jura is a fortified wine made by adding marc (a pomace brandy) to stop fermentation, resulting in a sweet, strong wine.
