Domaine Joannes Violot-Guillemard (Pommard)
Situated in the Village of Pommard, Domaine Violot-Guillemard is owned and run by the stocky and super-knowledgeable Thierry Violot and exceptionaly hospitable Estelle whom operates their busy and Chambre-d’Hôte. Thierry inherited small parcels of wonderful vineyards planted since 1936 and has now passed the reigns to his eldest son, Joannes. Bottling just 2000 cases each vintage, this quality artisan producer owns a total of five hectares across ten vineyards which he farms biologically. All fruit is handpicked and de-stemmed, then pressed in a pneumatic press prior to a four-day cold maceration in open wood fermenters. Spontaneous ferments for about 15 days at up to 33 degrees during which time pigeage takes place. The wine is then settled before being racked to 225 litre low toast barrels, the new population is maintained at 50 per cent. Transfer of grapes and juice is done by gravity. The wines are racked just before the bottling takes place and are neither fined nor filtered. The TGV wines completely defy the old notion that Pommard is hard and needs ten years to soften.
